Weekend Dinner Idea: Spiced Pork Tenderloin

If you're having a lazy Saturday like I am, but don't want to spend the whole afternoon/ evening in the kitchen, this simple Spiced Pork Tenderloin recipe is a must-try. It uses simple, every-day spices easily found in your pantry and it is possible to create this dish in an hour from marinading to serving (if you don't mind that the spices flavours are not completely absorbed in the meat). Serve it with some sauteed or roasted greens and potatoes, and you got yourself a winning, yet simple and delicious Saturday night feast.

Ingredients

2 Pork Tenderloin (With bone)
Paprika powder
Cinnamon
Salt
Black Pepper (Ground)
Parsley
Olive Oil Spray

Preparing the Tenderloin

Cover the tenderloin in a thin layer of the spices, in the following order:
  • Salt
  • Black pepper
  • Cinnamon powder
  • Paprika powder (minimal amount, unless you like the burning sensation on your lips and mouth)
Spinkle some parsley and set the tenderloins aside in the fridge for an hour (or more if you're preparing it in the morning or after lunch)

Cooking Instructions

Pre-heat oven to 220°C (428°F)

Grease the Pyrex with olive oil spray.

Using the olive oil spray, cover both sides of the tenderloin with a layer of olive oil.

Let the tenderloin cook in the oven for 15 minutes, or until brown.

Serve with some sauteed greens or baked potatoes and enjoy your evening!
